Creamy Red Cabbage Soup


  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 4 garlic cloves, chopped
  • 1 medium head red cabbage, shredded
  • 3 handfuls chopped potato
  • 1 tart apple
  • 1.2 litres chicken, beef or vegetable stock
  • 2 tablespoons red wine vinegar
  • 160 ml milk or cream
  • Salt and pepper to taste


  1. Heat the butter in a large saucepan over a medium-low heat and saute the onion and garlic until the onion is soft.
  2. Add the cabbage, potato, apple, vinegar and stock, bring to the boil.
  3. Reduce the heat and simmer, covered, for about 30 minutes or until the cabbage is tender.
  4. Puree in a processor or blender, return to pan.
  5. Add milk or cream and season to taste.
  6. Reheat to serve, without letting the soup boil.
  7. Garnish with bacon bits and a dollop of sour cream.
  8. Serves 4
