Save the bananas with a nutty quickbread

Oops!  Forgot about the bunch of bananas I bought a week ago.

A simple banana bread to the rescue.


Classic Banana Bread


Banana Nut Bread


  • 3 ripe bananas
  • 2 eggs, beaten
  • 2 tablespoons butter, melted
  • 2 teaspoons vanilla
  • 2 cups flour
  • 3/4 cup sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup chopped nuts


  1. Mix bananas, vanilla and eggs
  2. Mix flour, sugar, cinnamon, salt and soda
  3. Add dry ingredients to wet mixture
  4. Add nuts
  5. Stir well
  6. Put in buttered 9x5 inch loaf pan
  7. Bake 1 hour at 350F

After all you cannot live off banana smoothies, can you?
