It is one of those days. A lazy Sunday afternoon. I want something but not sure what. After four trips to browse the refrigerator, I decided it better be something on the healthy side before I lose all self-control.
The farmer’s market had huge cauliflowers yesterday that were a bargain but I wasn’t sure how I would use it all up and it was too large to fit in the fridge.
- Chicken boulllon
- Cauliflower florets
- Salt and pepper, to taste
- Bring cauliflower florets in chicken broth with seasonings to a boil and let simmer until tender. (I used a Slow Cooker on high for 2 hours).
- Blend until smooth. My Nutribullet worked well as usual in a matter of seconds.
