Some days I feel like I need a ‘South of the Border’ flavor.
Always having chicken on hand, this lunch of Mexican Chicken Salad was a cinch.
Using the usual ingredients, all it needed was cumin and jalapenos.
Chipotle powder can be substituted for jalapenos.
- Diced chicken breast
- Chopped onion
- Chopped green apple or jicama
- Jalapeno pepper
- Chopped celery
- Slivered almonds
- Chopped cilantro
- Cumin or Chipotle to taste
- Salt and Pepper
- Croissant or tomato
- Mix chopped vegetables with chicken.
- Coat with mayonnaise.
- Serve as sandwich or salad with salsa or hot sauce
